    Pastries and danishes

    Glazing pastries and danishes is a breeze for the compact Junior 20 system. It is an efficient way to process icing, decorate cakes, and coat all kinds of cookies. Thanks to its even surface, icing can be applied in a smooth mirror on top, while the pointed base ensures the glaze finishes evenly at the edges of the pastry. Crullers, plain donuts and jelly donuts are easy to coat quickly, then package for delivery to stores. The machine can also ice and decorate danishes, chocolate-dipped cookies and apple or cherry turnovers, for example. In some cases, no base glaze is required. The compact system can also create striped decorations on granola bars or cookies.

    Icing and compound chocolate

    The Junior 20 icing machine processes not only icing, but also compound chocolate and even chocolate coatings. Popular applications include heart-shaped biscuits, almond pastries, chocolate croissants and Palmiers, all of which only need to be partially coated by the conveyor system. An optional accessory can even be used to coat the bottoms of nut bars on the conveyor belt in a single work step. Products like “Eisenbahnschiene” cookies, which are coated on both sides and highly demanding for baking technology, are no problem for an experienced baker and the Junior 20 pastry machine.
